A brief history of what we call scones. They are light brown on top and have a light texture and soft inside and they are similar to a cookie. There are several variatins different from Scotland, Germany, and do not forget the Dutch. This is a recipe that I gathered for you to try. They are very nice if you are a chocolate, raspberry and lover like me.
Chocolate Raspberry Scones
2 cups all-purpose flour
1 / 3 cup sugar
1 teaspoon baking powder
1 / 2 teaspoon baking soda
1 / 2 teaspoon salt
3 ounces butter, cut into chunks
1 / 2 cup chocolate chips dark
1 / 2 cup milk chocolate chips
1 / 2 cup milk
1 teaspoon vanilla bean paste
1 large egg, lightly beaten
1 cup raspberries
1 large egg, lightly beaten

1 large egg
First Preheat oven to 375f. Then, you must first mix the flour, sugar, baking powder, baking soda and salt. Make sure you measurements do not get back to baking soda and baking powder. Trust me it will be a very bad tasting bun if you do. Will be more like a brick of raspberry and chocolate.
Then begin to cut the butter into the flour mixture with a pastry blender if you have one, or a food processor with a dough sheet work as well. If you have none you can use two knives or a fork until crumbly. You then add chocolate chips into dough mixture and give a slight stir.
In a small bowl, then added the milk, vanilla bean paste and the lightly beaten egg. One that you have given the liquid mixture a little stir that start to add the liquid mixture to the flour mixture and mix just until the dough comes together. Do not over work or mix the dough that will not let the cake rise properly during baking if you do. The bun will be too dense if this happens.
You will have the crumb mixture and knead the dough very gently on a lightly floured surface 3 to 5 times, or until it joins. Then the mass Pat into a circle that is about 1 inch thick. Then cut your scones into the desired shape. You can use a round cookie cutter, or any design metal ring, or squares, if you prefer.
Then place the buns on a greased baking sheet, or one that has been prepared with nonstick spray. Make the egg wash, and brush the top with this mixture, then normal sugar is added on top and bake.
Bake for about 10 minutes and then turn 180 degrees and then continue for another 10 minutes. The total cooking time is about 20 minutes or until browned. Remove cakes from oven and place it on a rack to cool. Once they have cooled you can add your raspberries on top for garnish sprinkled with a little sugar. These are delicious.
